The Soffocone di Bibi Graetz is made from Sangiovese grapes with a small addition of Canaiolo and Colorino. The reference vineyards - about 40 years old - are rooted in soils characterized by clay and galestro. In the cellar, during red vinification, the alcoholic fermentation spontaneously started thanks to indigenous yeasts, taking place in stainless steel for about 10 days. The aging took place for 15 months in French oak barrels.
