Corpo medioSauvignon Tra Donne Sole di Vite Colte is a dedication to Cesare Pavese, a pure Sauvignon from vineyards located in two different areas. From one, it is picked slightly early to have acidity and richness of varietal aromas typical of Sauvignon, from the other slightly late, to have extractive richness and aromas of tropical fruit. Vite Colte is a cooperative project that brings together 180 producers and relies on a large heritage of vineyards. In order to maintain high quality standards, for years it has been applying rigorous protocols signed with its suppliers; to give a few examples, only vines with plants over 15 years of age, conducted using integrated and/or organic production, with low yields per vine, are allowed in the choice of vineyards, etc.. Both fermentation and 3 months aging on lees take place in steel containers at low temperatures.
Among Donne Sole by Vite Colte, it shows in the glass a straw yellow color with golden reflections. On the nose, it is intense, with notes of tomato leaf, elderflower, pineapple sage, and hints of licorice. The palate is full, silky, with alcoholic generosity well balanced by freshness and balsamic notes. Very suitable to accompany lightly smoked salmon trout carpaccio.
