The Sauvignon Praepositus of Abbazia di Novacella comes from 100% Sauvignon Blanc grapes grown in the area of Bressanone and Varna, in the province of Bolzano. The vineyards are located on soil rich in silt-sandy gravel at an altitude between 600 and 650 metres above sea level. After the harvest in September, the vinification and ageing process took place for a few months in stainless steel containers. Before being released, the wine rested for 4 months in the bottle.

The wines of the Praepositus line of the Abbazia di Novacella winery come from the best company vineyards. And, like those of previous vintages, this Sauvignon 2019 remains one of the category references of South Tyrolean wine production.

SAUVIGNON PRAEPOSITUS ABBAZIA DI NOVACELLA: TASTING

The Sauvignon Praepositus of Abbazia di Novacella shines in the glass with a bright straw yellow colour with timid greenish reflections. Notes of elderflower, mint, citrus and yellow pulp fruit make up a slender and elegant nose. The fine aromaticity of Sauvignon then explodes at the sip supported by a fresh trail that is combined with a clear and very pleasant minerality that persists in the long finish. Excellent to be enjoyed as an aperitif, with seafood first and second courses or as an accompaniment to simple recipes based on vegetables or white meat.
