The Sauvignon di Abbazia di Novacella was obtained from 100% Sauvignon Blanc grapes grown in the territory of Cornaiano, a hamlet of Appiano sulla Strada del Vino (BZ). The vineyards of origin insist on soils characterised by silt-sandy gravel of morainic origin, at an average altitude of 420 metres above sea level. Alcoholic fermentation took place in stainless steel, through the use of selected natural yeasts, at a controlled temperature of about 20° C. Before being marketed, Abbazia di Novacella's Sauvignon Alto Adige DOC 2017 rested for 6 months in steel.

SAUVIGNON ABBAZIA DI NOVACELLA: TASTING

The Sauvignon di Abbazia di Novacella has a straw yellow colour with greenish reflections in the glass. On the nose, it has aromas of yellow pulp fruit emerge together with vegetal hints of nettle and pepper leaf. Full-bodied, the taste is fresh and mineral with a pleasant aromatic persistence. Excellent as an aperitif, at the table, it goes well with fresh and semi-aged cheeses, as well as with delicious seafood and vegetarian recipes. Also to be tried paired with simple dishes based on white meats.
