We are in Oslavia, a land of borders and conflicts; Since 1988, Dario has been cultivating about 7 hectares with the traditional grapes of the Gorizia region. The soils are composed of "ponca" and clays, the slope of the vineyards requires almost exclusively manual processing, the natural cover crop is natural, and the treatments are reduced to a practically homeopathic use of copper and sulfur. As an ancient tradition in these places, the fermentations in the cellar occur spontaneously, with macerations of variable duration. Fermentation takes place spontaneously in open wooden vats, without temperature control, minimal addition of sulfur, and with daily manual punch-downs. The aging takes place in large exhausted barrels for 2 years, with spontaneous clarification by sedimentation in steel tanks before bottling.
The extracted wine named Rosso di Dario Prin?i?Rosso from Venezia Giulia by Dario Prin?i? is an intense ruby red. On the nose, it releases mineral notes of graphite intertwined with vegetal notes of boxwood and medicinal herbs, fruity notes of blackberry and raspberry, and spicy notes of black pepper and cloves. In the mouth, it is warm and fresh at the same time, with lively tannins, beautiful salinity, and a spicy finish. Excellent with roasted lamb.
