The Prosecco Senior di Bortolomiol is obtained from 100% Glera grapes harvested on the hills of Valdobbiadene (TV) in the second half of September. The white winemaking process began with soft pressing and included a phase of alcoholic fermentation at a controlled temperature. Following the rules of the Martinotti Method, the second fermentation for the sparkling process took place in an autoclave for 25-30 days. The residual sugar content is 15 g/liter.
