Corpo robustoPilùna by Castello Monaci is a monovarietal Primitivo. Located just a few kilometers outside the Primitivo di Manduria DOC, Pilùna falls under the IGT Salento classification. The name "Primitivo" comes from "primo nativo," as it is the first red grape variety to be ready for harvest. "Pilùna" refers to the ancient tuff containers used for storing oil and wine. Since the late 1970s, the cellar has been home to the treasure of Castello Monaci: a barrel cellar containing over 1000 barriques, carved into the same white tuff rock that forms the deepest layer of soil in the surrounding vineyards. The winery is equipped with modern winemaking tools, including a refrigerated crushing system with small-capacity stainless steel tanks, temperature-controlled with double cells, allowing the separate fermentation of small batches to highlight the specific characteristics of each. Pilùna ages for about 6 months in barriques, with the remainder maturing in steel.
Castello Monaci's Primitivo Pilùna has a ruby red color with purple hues. The nose is generous, with black berry jam, pepper, and Mediterranean herbs. On the palate, it is full-bodied, with good aromatic correspondence to the nose. It pairs well with grilled marinated meats.
