The Pinot Nero Sanct Valentin Riserva di San Michele Appiano was obtained from 100% Pinot Nero grapes grown in the territory of Appiano on the Strada del Vino, in the province of Bolzano. Here the soils are composed of moraine deposits and limestone gravel and are located at an altitude between 400 and 550 metres above sea level. After a cold pre-maceration lasting 3 days, the must was subjected to alcoholic fermentation in steel. After the malolactic fermentation, useful to soften the structure and the aromatic profile, the wine rested for 12 months in barrique-tonneau. After the assembly of the various lots, the Pinot Nero Sanct Valentin was aged for a further 6 months in large wooden barrels. The Sanct Valentin line includes wines from the most prestigious vineyards of the San Michele Appiano winery.
The Pinot Nero Sanct Valentin of San Michele Appiano reveals itself to the sight of ruby colour. On the nose, it expresses intense aromas of cherry and small red fruits that intertwine with floral hints of violet and seductive balsamic notes and dark spices. Complex and elegant, on the palate, it reveals a smooth tannic texture and an exhilarating gustatory balance. The finish is long and persistent. At the table, it goes well with cured meats and aged cheeses as well as first and second courses prepared with white or red meats or game. Surprising as an accompaniment to grilled white fish dishes.
