Pinot Grigio Sanct Valentin di San Michele Appiano: PRODUCTION
The Pinot Grigio Sanct Valentin di San Michele Appiano is produced from 100% Pinot Grigio grapes carefully selected in the territory of Appiano (BZ). The original vineyards, which include vines between 15 and 32 years old with south-east and south-west exposure, are located on gravelly-limestone soils, at an altitude ranging from 462 to 600 meters above sea level. After manual harvesting, carried out around mid-September, the grapes were sent for vinification, which included, in addition to alcoholic fermentation, also a malolactic fermentation phase usually reserved for the production of red wines. Before bottling, the Pinot Grigio Alto Adige DOC Sanct Valentin from San Michele Appiano matured for 11 months in barriques-tonneaux on its own yeasts, plus another 6 months in stainless steel tanks.

The Pinot Grigio Sanct Valentin di San Michele Appiano presents itself in the glass with a straw yellow color and golden reflections. On the nose, it releases aromas of pear and tropical yellow fruits that blend with delicate hints of vanilla and shy toasty notes. On the palate, it offers a taste characterized by fruity hints and a vibrant freshness combined with an elegant minerality that lingers in the finish.
