Elena Walch's Pinot Grigio is mainly produced from the Klughammer vineyard in Caldaro (230 metres above sea level, on soil composed of calcareous pebbles from the Adige and morainic deposits). The grapes are softly pressed and the must undergoes static clarification. Fermentation takes place in steel vats at a controlled temperature of 20° C (temperature control serves to ensure that fermentation develops slowly and constantly and that there are no fermentation blocks, with the death of the wine yeasts and the possible triggering of fermentation by other unsuitable fungi or bacteria; in the case of whites and rosés, it is also particularly important to preserve the aromas). The wine then ages, for a few months, on its own yeasts in stainless steel containers.

PINOT GRIGIO ELENA WALCH: TASTING

Elena Walch's Pinot Grigio enters the glass with a bright straw yellow; on the nose, it is typical and pleasant in the hints of pear, white flowers, slightly smoked pepper and sage. The mouth has structure, minerality and defined persistence. Very good with spillo squid paccheri, sage, lemon zest and bottarga.
