The Oca guardiana that sleeps blessed from Aia delle Monache is the fresh and young expression of the Pallagrello Bianco. We are in the hilly area of Castel Campagnano, 260 metres above sea level, on mixed sandy-clayey soils with good organic endowments. The plant dates back to 2003 and is run with environmentally friendly agronomic techniques. The grapes are harvested at the beginning of September in small boxes; once in the cellar they are pressed whole and the must is fermented at a controlled temperature in stainless steel vats. The ageing of the wine takes place, again in steel vats, in contact with the fine lees for about 6 months; it is bottled in the spring following the harvest and left to rest in the bottle for at least a month.

PALLAGRELLO BIANCO AIA DELLE MONACHE: TASTING

The Blessed Sleeping Guardian Goose from Aia delle Monache has a bright straw yellow colour. The nose has very pleasant hints of yellow peach, cedar, cinnamon and hay and the taste is harmonious, with well-balanced softness, salt and acidity. Wine of a certain thickness, capable of happily accompanying seafood dishes with a strong taste, for example, grilled marinated monkfish, but also tasty first courses such as carbonara.
