The Negroamaro Il Pumo di Cantine San MarzanoNegroamaro Il Pumo by Cantine San Marzano is born from the vineyards of San Marzano di San Giuseppe, a small Salento village, an ancient arbëreshë center of the region. We are at an altitude of 134 meters above sea level, on the plateau of a limestone hill of the Tarantine Murge. The soil is on the surface of medium clayey texture, shallow, and with a good presence of skeleton. The harvest of Negroamaro takes place between the second and third week of September; the thermo-controlled maceration lasts about 10 days and the alcoholic fermentation is carried out with selected yeasts. It is followed by a brief refinement in steel.
The Negroamaro Il Pumo by Cantine San Marzano presents itself with a youthful ruby red color with purple-black reflections. On the nose, it is intense with a great charge of red and black fruits, and almost pungent, due to the strong notes of Mediterranean herbs, primarily thyme. On the palate, it is fresh, savory, and well-balanced. Very good, slightly refreshed, with Salento gnocchi with a highly aromatic sauce.
