Corpo medioBorgogno's Barolo DOCG is born from the union of 5 cru vineyards: Liste, Cannubi, Fossati, Cannubi San Lorenzo, San Pietro delle viole, facing south-southeast, on clayey limestone marl. The Nebbiolo harvest takes place between the end of September and mid-October. Spontaneous fermentation takes place in concrete tanks and lasts for about 12 days with temperatures between 22° C and 29° C; the subsequent maceration, with a submerged cap for at least 30 days, reaches a temperature of 29° C. The malolactic fermentation starts naturally and ends in about 15 days, with a constant temperature of 22° C. The subsequent refinement takes place in 4500 L Slavonian oak barrels for 4 years, followed by a further 6 months of refinement in the bottle.
Borgogno's 2015 Barolo has a beautiful ruby colour, with slight garnet hues. On the nose, it is rich in small red fruits, wild strawberry in primis, accompanied by violets, balsamic-mentholated green notes and an important spiciness. On the palate, it is large and juicy, with well-present but integrated tannins and a taste profile well in line with the nose. Very happy the pairing with the traditional braised in Barolo.
