Roggiano by Cantina Vignaioli di Scansano is the most characteristic interpretation produced by the Morellino di Scansano denomination cooperative. Composed of 95% Sangiovese and 5% Alicante, the grapes come from various vineyards located at 200 to 300 meters above sea level, from soils mainly composed of sandstone and silt. The harvest takes place at the end of September; the grapes are harvested at perfect phenolic ripeness and protected with the use of carbonic snow. After hot maceration (35° C) for 12 hours, the temperature-controlled fermentation then takes place at a max temperature of 27° C. After 7 days of fermentation with the skins, the wine is aged on the fine lees until the malolactic fermentation takes place (in November), then is transferred to another steel fermenter for 4 months along with the fine lees. Once bottled, it rests for an additional 3 months before being placed on the market.
Roggiano by Cantina Vignaioli di Scansano has a full ruby color with youthful purple reflections. The nose has a lot of fruit, with notes of cherry compote, Moro orange, ripe blackberry, as well as a a beautiful florality, sweet spiciness, and hints of undergrowth. In the mouth it is lively and crisp, with beautiful tannins that are softened by the fruit. Perfect with a selection of Maremma cured meats and pecorino cheeses, as well as with bread gnocchi in a wild boar sauce.
