It was originally a cuvée of Riesling, Chardonnay, Gewürztraminer, and a small percentage of Sauvignon Bianco; with the 2013 vintage, Kerner was added, decreasing the percentage of Riesling and Gewürztraminer. The southwest-facing vineyards of the 5 vines are located at an altitude between 350 and 800 meters; the soils, very different from each other, are of dolomitic, porphyritic, sandy, and marly origin. The grapes are harvested and processed separately; the Chardonnay and Sauvignon Bianco are fermented in barrique, while the Riesling, Gewürztraminer and Kerner are fermented in steel tanks. At the end of fermentation, the young wines are blended and rest on the fine yeasts for about ten months; the wine is then bottled and further refined in the bottle for a few months.
Manna by Franz Haas has a yellow-golden hue when it is young; after a few years of maturation, intense golden tones appear. The nose is seductive, with a complex and layered bouquet that calls forth notes of elderberry, pistachios, and rose petals. In the mouth, it is notable for its complexity and concentration combined with a soft elegance and a mineral structure. Very good with grilled vegetables, as with Japanese cuisine in general.
