The Difese di Tenuta San Guido has been produced starting from Cabernet Sauvignon (70%) and Sangiovese (30%) grapes grown on the San Guido estate located in the area of Bolgheri (LI). The vineyards, facing south-southwest, are situated on predominantly limestone soils rich in "galestro" and stones, partially clayey, at an altitude ranging from 100 to 300 meters above sea level. The harvest was carried out manually in early September for Cabernet and at the end of the month for Sangiovese. Alcoholic fermentation took place in stainless steel tanks at a controlled temperature of 29-30°C, with the use of indigenous yeasts. The maceration of the must in contact with the skins lasted 10-13 days for Cabernet and 13-15 days for Sangiovese. Before bottling, Le Difese di Tenuta San GuidoDifese from Tenuta San Guido aged for 8 months in oak barriques.
Le Difese di Tenuta San GuidoDifese from Tenuta San Guido presents itself in the glass with an intense ruby red color. On the nose, it expresses aromas of sour cherry and small red fruits that blend with floral hints of violet and notes of dark oriental spices combined with vegetal nuances. The palate is smooth and harmonious, enhanced by elegant tannins and a delicate, fresh-savory finish that lingers. It pairs well with cured meats and aged cheeses as well as succulent earthy dishes based on red meats or game.
