The Makisè by Cantine Fina is a refermentation of Grillo in purity. The grapes ripen in a wonderful setting, the hilly hinterland on the edge of the Stagnone Nature Reserve, which overlooks the sea of Marsala and looks towards the Egadi islands. The Fina family is fully aware that producing wine in this environmental context is a responsibility as well as a source of pride. The Grillo vineyards destined for Makisè are harvested in the second ten days of August; the base wine is obtained from the low temperature fermentation of the must obtained from the soft pressing of the whole grapes. The second fermentation takes place in a vat at a temperature of about 15° C for a period of two months.
Cantine Fina's Grillo Frizzante Makisè is straw yellow with greenish reflections animated by a delicate effervescence. The nose expresses a lot of territorial frankness, with notes of orange blossom and broom, together with pungent references to sage and tomato leaf, and enveloping puffs of salt. In the mouth, it is gratifying, with fine bubbles, a certain flavour, citrus freshness and closure on aromatic herbs. An ideal aperitif, it is very good with arancine and with aubergine caponata, but also perfect for couscous alla trapanese.
