The Gewürztraminer Praepositus di Abbazia di Novacella has been obtained from 100% Gewürztraminer grapes grown in the territory of Varna, in the province of Bolzano. The original vineyards, made up of 20-25 year old plants with south and southwest exposure, lie on soils characterized by morainic deposits, rich in mica schist, paragneiss, and quartzite, at an altitude ranging between 600 and 650 meters above sea level. After the harvest, the grapes were sent for vinification which took place in stainless steel. Before being commercialized, the Gewürztraminer Alto Adige DOC Praepositus by Abbazia di Novacella was aged for 6 months in stainless steel and 1 month in the bottle. The Praepositus line of Abbazia di Novacella refers to wines produced from the best estate vineyards.
