The Frascati Superiore Poggio Verde di Principe Pallavicini is produced from vineyards cultivated in the heart of the appellation, around the Tenuta di Colonna, the original nucleus of the family's winemaking production. The grapes used are 70% Malvasia del Lazio, and 15% each of Greco and Bombino. Before vinification, the berries undergo cryomaceration (a brief maceration at low temperature, allowing for a moderate extraction of the skin components) and are gently pressed; only the free-run juice is then fermented. The resulting wine is aged on lees for four to five months before bottling.

Frascati Poggio Verde pours into the glass with a bright straw yellow color, with green gold reflections. On the nose, it is pleasant and typical, with notes of wildflowers, spontaneous herbs, and white-fleshed fruit. The palate is fairly fresh and well-balanced. It pairs interestingly with testaroli al pecorino romano.
