Corpo medioThe Etna Rosso Calderara Sottana di Girolamo Russo was obtained from 94% Nerello Mascalese and 6% Nerello Cappuccio grapes cultivated in the homonymous contrada of Randazzo (CT), on the north side of Mount Etna. The vineyards are located on volcanic and sandy soils, rich in minerals, at an altitude of about 700 meters above sea level. The harvest was carried out by hand in the second half of October with a yield of 30 quintals per hectare. During the winemaking process, alcoholic fermentation was initiated by the naturally occurring yeasts on the grapes, taking place at a temperature of 28-30°C. The skin maceration lasted for 15 days. The aging process involved 18 months in used barrels followed by an additional 6 months in the bottle.
The Etna Rosso Calderara Sottana di Girolamo Russo presents itself with an intense ruby red color. On the nose, it expresses aromas of marasca cherries and wild berries combined with hints of Mediterranean herbs, light notes of graphite, coffee powder, and dark spices. The palate is broad and structured, supported by well-integrated tannins and a persistent finish. It pairs well with aged cheeses as well as flavorful dishes of red meats or game.
