Corpo medioThe Etna Rosso by Tornatore is made from Nerello Mascalese and Nerello Cappuccio grapes, grown on the northern slopes of Mount Etna in the municipality of Castiglione di Sicilia (CT). After the harvest, which takes place in the second and third decades of October with a yield of 70 quintals per hectare, the grapes are transported to the winery, where they undergo further selection and are then fermented. The alcoholic fermentation, with maceration of the must in contact with the skins, takes place in cement tanks for 10 to 12 days at a controlled temperature of 22-25°C. After fermentation, the maceration continues for a few more days before pressing and racking. Before being released, the Etna Rosso by Tornatore is aged for 6 months in large wooden barrels and then for an additional 3 months in the bottle.
The Etna Rosso by Tornatore presents a light ruby red color in the glass. On the nose, it offers aromas of marasca, black cherry, and small forest fruits, intertwined with floral notes of violet and subtle hints of black pepper and dark spices. On the palate, it is full and harmonious, enhanced by a smooth tannic structure and a gentle freshness combined with a strong mineral character that persists in the finish. It pairs well with cured meats and aged cheeses, as well as rich dishes made with vegetables, red meats, or game.
