The small original vineyard includes vines 60-90 years old trained in traditional bush form on soils mainly composed of volcanic ash, at an altitude between 900 and 950 meters above sea level. The white vinification process included alcoholic fermentation carried out at low temperatures in French oak barrels of 10 and 50 hectoliters. Malolactic fermentation and aging took place for 10 months in French oak barriques. Before commercialization, the Etna Bianco Montalto di Tenuta delle Terre Nere rested for 8 months in the bottle.
The Etna Bianco Montalto di Tenuta delle Terre Nere presents itself in the glass with a straw yellow color and golden reflections. On the nose, aromas of yellow pulpy fruit and hints of spring white flowers explode, reaching warm notes of vanilla and sweet spices. The taste is intense and structured, enveloping and mineral. The floral and spicy finish is long. It pairs well with vegetarian dishes and delicious seafood dishes at the table. Also excellent paired with white meats.
