La Coda di Volpe from La Guardiense presents itself with a straw-yellow color and greenish reflections. It smells of flowers, snuff peach, pear, and just lit matchstick; it is thin, flowery, fresh, and salty on the palate. Excellent with dishes based on spring and summer vegetables, for example with risi e bisi, as well as with the Tuscan zucchini scarpaccia.
