The Chardonnay BIO Salento Passo Marchese by Paolo Leo is produced from 100% Chardonnay grapes grown in the rural area of San Donaci, in the province of Brindisi. After manual harvesting, carried out in the early hours of the morning, the grapes are immediately transported to the cellar for vinification. After destemming and crushing, the must is fermented at a controlled temperature of 15°C for a period of 10 days. The wine is then aged for 4 months in stainless steel and an additional month in the bottle.
The Chardonnay BIO Salento Passo Marchese by Paolo Leo presents itself with a straw yellow color and greenish reflections. On the nose, it expresses aromas of pear, peach, and white-fleshed fruit combined with hints of spring flowers and slight notes of Mediterranean citrus. On the palate, it is fresh and savory, enhanced by a pleasant fruity taste that persists in the finish. At the table, it pairs well with fresh and semi-aged cheeses as well as vegetarian dishes and delicious seafood recipes based on white fish, shellfish, and crustaceans.
