Corpo medioPiper-Heidsieck's Champagne Rosé Sauvage is a gastronomic wine, as the company likes to define it, a wine that calls summer evenings in the countryside, with a large grill under the starry sky. It is produced for 50-55% from Pinot Noir of the Cote des Bar (of which 20-25% vinified in red), for 30-35% from Pinot Meunier and for the remaining 15-20% from Chardonnay della Montagna of Reims. Between 10 and 20% the cuvée is made up of reserve wines, i.e. wines from previous vintages.
Piper-Heidsieck's Champagne Rosé Sauvage charms by sparkling a deep ruby pink in the glass; the nose is raspberry, blackberry, blueberry, with a fresh background of mandarin and elegant references to saffron. In the mouth, it attacks with freshness and flavour of fruit, then turning on smoky notes and lengthening considerably. Perfect with fragrant grilled meats, such as with the exotic duck with orange; if, on the other hand, you want to marry it by the sea, try it with Cacciucco alla Livorno or with gnocchi all'arrabbiata di polpo.
