The Caeles di Firriato Catarratto is a certified organic wine obtained from 100% Catarratto grapes grown on the Borgo Guarini estate in the Agro Trapani area. Here the vineyards insist on a predominantly clayey soil, at an altitude of 350 metres above sea level with southwest exposure. After fermentation, which took place for 10 days at a temperature of 18° C, the wine was aged for 3 months on noble lees in stainless steel tanks and a further 2 months in bottle. Catarratto is an autochthonous Sicilian white berried grape, particularly widespread in the province of Trapani, used, due to the sugar concentration, also for the production of Marsala.

CAELES CATARRATTO FIRRIATO: TASTING

Firriato's Caeles Catarratto shines in the glass of a straw yellow colour with greenish reflections. On the nose, docile floral hints of broom intertwine with intense hints of ripe white pulp fruit. The sip is fresh and satisfying, supported by a beautiful mineral trail that slips into a persistent finish with slight herbaceous nuances. At the table, it goes well with tasty seafood recipes based on fish and shellfish but also with simple dishes based on white meats.
