Ca' del Merlo di Quintarelli is an original blend of Corvina, Corvinone, and Rondinella, complemented by 15% of Cabernet Sauvignon, Cabernet Franc, Nebbiolo, Croatina, and Sangiovese. After the harvest with careful selection of the clusters, the must macerates and ferments for the first time, then it is refermented on the Amarone grape skins, undergoing a second fermentation. During this phase, it gains additional body, structure, and color. The subsequent aging of Ca' del Merlo di QuintarelliCa' del Merlo takes place in large Slavonian oak barrels for 7 long years, and then further in the bottle.

CA' DEL MERLO QUINTARELLI: TASTING

Ca' del Merlo di Quintarelli has a bright garnet color. On the nose, spices dominate, with black pepper, cardamom, and cinnamon, followed by cherry jam, dried plum, violet and rose potpourri, musk and tea leaves, China root and rhubarb. The palate is enveloping, generous, with tannins tightly bound to the fruit, good freshness, and a touch of savoriness. An imposing wine to be opened in advance, then enjoyed with a traditional regional dish such as roasted guinea fowl with peverada sauce.
