The philosophy of the Colombini family and Fattoria dei Barbi has always been to understand and study the most innovative technology and merge it with the best tradition, in order to enhance everything that is produced without ever altering its typical characteristics. The vineyards of Fattoria dei Barbi are located on galestro and alberese soils, at an altitude between 300 and 500 meters above sea level, with a south exposure; the current vines were planted between 1975 and 2017. The grapes are crushed and destemmed, then rapidly chilled to 16°C in a CO2-protected environment. This skin cooling process allows for greater extraction of anthocyanins and polyphenols. Alcoholic fermentation lasts about 16/17 days at a controlled temperature of 27°- 28°C. Malolactic fermentation follows racking, then the wine rests in medium-small capacity wood barrels (225 l – 1500l) for at least 2 years, and subsequently in larger capacity casks and bottles.
The Brunello di Montalcino di Fattoria dei BarbiBrunello di Montalcino of Fattoria dei Barbi has a bright and concentrated ruby color. On the nose, it boasts scents of ripe strawberry, dog rose, sweet spices, sage, anise, and iris. In the mouth, it is warm and open, balanced, long and supported by a good acidity, soft tannins, and excellent structure. Delicious with grilled venison sausages!
