The Bellone Ultimo Colle di Sant'Eufemia is a 100% Bellone organic white base grown in the area of Cisterna di Latina (LT). The harvest was carried out by hand in 15 kg crates at the end of August. The vineyards, trained with spurred cord, are spread over lands characterized by pozzolana and volcanic lapilli. During the white winemaking process - carried out without maceration of the must on the skins and malolactic fermentation - the alcoholic fermentation took place at controlled temperature for about 2 weeks. The refinement took place in stainless steel for several months.

The Bellone Ultimo Colle di Sant'Eufemia stands out at first sight with an intense straw yellow color. On the nose, it expresses aromas of tropical yellow pulp fruit and aromatic herbs combined with citrus and flint notes. The taste is pleasantly fresh and mineral with excellent taste-olfactory consistency. Try it with bruschetta with poached egg and vignarola.
