The Barolo Bricco Pernice di Elvio Cogno is obtained from 100% Nebbiolo grapes (Lampia variety) and takes its name from one of the parcels of the Ravera cru - located in the municipality of Novello (CN) - from which it originates. The vineyards from which it comes are located on limestone-clay soils, at an altitude of about 320 meters above sea level. The vinification process took place in stainless steel tanks at controlled temperature, including a 30-day post-fermentation maceration phase. The Barolo Ravera Bricco Pernice was aged for 30 months in large Slavonian oak barrels of 25-30 hectoliters (with 90 days on the lees) and for a further 18 months in the bottle.
Elvio Cogno's Barolo Ravera Bricco Pernice appears in the glass with a garnet red color. On the nose, aromas of small red fruits in jam emerge, combining with floral and undergrowth scents, as well as light notes of dark spices. The taste is soft and deep, supported by a silky tannic texture and a long, persistent mineral finish. On the table, it pairs well with mature cheeses and succulent earthy dishes based on red meats or game.
