Corpo robustoThe Barolo di Paolo Scavino was produced from 100% Nebbiolo grapes originating from 7 different crus located between the municipalities of Castiglione Falletto and Serralunga d'Alba, in the province of Cuneo. The vinification process included separate alcoholic fermentations for the different vineyards. Subsequently, the malolactic fermentation, which softened the aromatic and structural roughness of the must, took place in wood, without resorting to filtration operations. Before bottling, the Barolo di Paolo Scavino aged for 10 months in barriques and for a further 12 months in large French oak casks.
In the glass, the Barolo di Paolo Scavino presents an intense ruby red color with garnet reflections. On the nose, it reveals aromas of cherry and ripe small red fruits combined with hints of potpourri and subtle notes of dark spices. Completing the olfactory profile are balsamic nuances of underbrush and mineral undertones. The palate is enveloping and elegant, thanks to a smooth tannic texture and a gentle fresh-sapidity that lingers in the long finish. It pairs well with aged cheeses as well as flavorful meat dishes based on red meats or game.
