The Amarone della Valpolicella Classico Le Poiane di Bolla is composed of Corvina, Molinara, and Rondinella: these are the three native grapes that have shaped the history and success of the wines of Valpolicella since Roman times. By tradition, they are considered the viticultural symbols of the area and, although predominant, they are also accompanied by other grapes such as Forselina, Negrara, Oseletta, Rossignola, and Simesara, as well as imported grape varieties. Cantina Santi has chosen to express its passion for the Valpolicella territory and the knowledge gained during its centuries-old history by using exclusively the native grapes of this area in its wines, with a clear predominance of Corvina, a variety with great fruity potential which, if properly managed in the vineyard as well as in the cellar, gives rise to modern and enjoyable wines. This Amarone is crafted traditionally, with long drying of the grapes in the fruit drying facility, fermentation in stainless steel, and long maturation in large wooden barrels up to 80 hectoliters in capacity.
The Amarone della Valpolicella Classico Le Poiane di Bolla has an intense and bright garnet color. It smells of pepper and cinnamon, cherry and sour cherry, withered roses and violets, walnut, cocoa bean, coffee, and pipe smoke. The taste is enveloping and warm, with good freshness and a defined tannic structure. Perfect with braised beef cheek.
