Ripa della Volta Amarone della Valpolicella BIO 2021 comes from Valpantena, in the Romagnano area, where vineyards lie between 300 and 600 metres above sea level with south and south-west exposures on calcareous, stony soils. It is an Amarone rooted in organic viticulture and in the native grape varieties that the winery cultivates as a direct expression of its territory.

Appassimento and three years of oak maturation

The producer's blend includes 70% Corvina, 20% Corvinone, Rondinella, Oseleta and Turchetta. After harvest, the grapes rest in the winery's drying loft in Romagnano from October to January. The wine then matures for three years in 25-hectolitre Slavonian oak casks and French oak barriques, a process that builds depth while retaining the fresher character associated with Valpantena.

Tasting profile and food pairings

The aromatic profile is complex and concentrated, with dark red fruit, morello cherry, jujube and dark plum, joined by balsamic and spicy notes of eucalyptus, cypress resin and incense. The palate is structured, savoury and energetic, with refined tannins and a long balsamic finish. It pairs well with rich dishes such as porcini mushroom risotto, truffle tagliolini and slow-cooked meats.
