The Aglianico del Vulture La Firma di Cantine del Notaio was produced from 100% Aglianico del Vulture grapes, handpicked during the first decade of November when the fruit was fully ripe. During the red winemaking process, the must maceration with the skins lasted around 20 days, ensuring a significant extraction of color, tannins, and other substances. The aging took place in natural caves of volcanic tufaceous rock, extending for 12 months in barrels and French oak tonneaux, followed by an additional 12 months in the bottle.
