Corpo robustoThe Aglianico del Vulture Don Anselmo di Paternoster is dedicated to the founder, who in 1925 sold the first bottles of Aglianico under the family brand. The vineyards cover 4 hectares in the municipality of Barile, in the district of Gelosia, with 50-year-old vines located at 600 meters above sea level, which are a historical and ampelographic heritage of the company and produce very high quality with very low yields. The porous tuff soil retains the winter rains, thus becoming an important reserve during the hot and dry summer months of Basilicata, while significant day-night temperature variations enhance the formation of aromas. The summer of 2015 was particularly hot and dry, so the grapes were harvested early, bringing rich and healthy grapes into the cellar. Fermentation and maceration on the skins in steel tanks lasted for 15/18 days (depending on the plot) at 25/28 °C. The aging process then took place in large Slavonian oak barrels for 50%, and in French second-pass barrels for the remaining 50%, for a period of 24 months, followed by an additional 12 months in the bottle.
Don Anselmo by Paternoster is deep and bright ruby in color. On the nose, it is generous, with notes of blueberry and sour cherry, cocoa beans, dark spices, tobacco, leather, hints of balsamic and mentholated mint, and graphite minerals. The palate is explosive, voluminous, full of fruit, fresh and mineral, with powerful and noble tannins and an extremely long finish. Excellent with slow-cooked beef from Podolico cattle.
