Mezza_bottigliaThe Vinsanto del Chianti Classico Sant'Andrea di Villa Le Corti Principe Corsini is dedicated to Saint Andrew Corsini, a Carmelite and Bishop of Fiesole who was recognized as a saint by Boniface VIII. The vinsanto is the highest representation of the oral tradition passed down from generation to generation for centuries in Tuscany. The grapes, 60% Malvasia and 40% Trebbiano, are dried on racks for 3 months before pressing. Then, according to tradition, they ferment for 5 years in sealed barrels, remaining in contact with the fine lees for a long time. At the end of this period, only the best barrels continue to refine for another 5 years before being bottled.
The Vinsanto del Chianti Classico Sant'Andrea di Villa Le Corti Principe Corsini presents itself as a dark amber, almost an elegant mahogany. On the nose, it is rich in candied fruit, citrus, orange blossom and chestnut honey, humus, undergrowth, and a slight smokiness that further embellishes the picture; and then, after a while from opening, notes of date and spicy spices emerge. The mouth is extremely sweet but not lacking in elegance, thanks to the citrussy freshness and the sapidity that balance the drink and accompany the long persistence. Absolutely to be tasted alone, then to be paired with classic Tuscan cantucci, or with sheep's blue cheeses, or again, with cakes made of chestnut flour, such as Castagnaccio.
