The Timorasso Derthona di Oltretorrente was born in Paderna, in the area of the Tortona hills. Over the years, the company has carefully collected many plots with vines up to 100 years of age and planted 2 hectares in Timorasso in 2015. The main work of Chiara Penati and Michele Conoscente is to preserve the vines and accompany the grapes in the cellar processes, with the least intervention as possible. The Timorasso grapes are pressed without any de-stemming, ferment and then refine for 10 months in concrete. Refinement continues for a further 5 months before being placed on the market.

TIMORASSO DERTHONA OLTRETORRENTE: TASTING

The Timorasso Derthona by Oltretorrente is presented in the glass with a straw yellow colour. On the nose, white flowers and balsamic herbs slowly give way to smoky hints of flint and goudron. The mouth is of great structure, fresh, salty and taut. It is interesting to accompany it with black bread cicchetti, sweet gorgonzola and anchovies.
