The Syrah Principe di Granatey is a selection of the Colomba Bianca wineries. Produced for the first time in 2012, this Syrah comes from vineyards located at an altitude of 300 metres, harvested in mid-September. The grapes are harvested by hand and gently de-stemmed before maceration. After malolactic fermentation (a fermentation by lactic bacteria that transforms malic acid into lactic acid, modifying the acid structure of the wine and making it softer), the wine ages in steel silos for 8 months.

SYRAH PRINCIPE DI GRANATEY COLOMBA BIANCA: TASTING

The Syrah Principe di Granatey 2018 of the Colomba Bianca company has a ruby red colour with violet reflections, typical of the grape. On the nose, it is varietal in the notes of blackberry, violet and pepper; on the palate, it is structured, aromatic and long-lasting. Good with pork-based preparations spiced in the Indian way, or with medium-aged but very fragrant cured meats and cheeses, such as Nero dei Nebrodi lard (a traditional Madonie breed of pig), or Piacentinu Ennese (sheep's milk cheese with whole black pepper and saffron).
