The Sylvaner Praepositus di Abbazia di NovacellaSylvaner Praepositus from Abbazia di Novacella was produced from 100% Sylvaner grapes cultivated in the territory of the municipality of Bressanone, in the province of Bolzano. The originating vineyards, characterized by 15-20 year old vines with south and southwest exposure, are situated on permeable morainic deposits, at an altitude ranging from 650 to 750 meters above sea level. During the winemaking process, about 2/3 of the must was fermented and aged in stainless steel, approximately 1/3 in 30-hectoliter acacia wood barrels, and about 5% in French barriques. The aging process lasted a total of 6 months. Prior to commercialization, the Alto Adige DOC Praepositus Sylvaner from Abbazia di Novacella rested in the bottle for 1 month. The Praepositus line of Abbazia di Novacella includes wines obtained from the best estate vineyards.

The Sylvaner Praepositus di Abbazia di Novacella presents itself with a pale yellow color and golden reflections. On the nose, it offers aromas of pear, apricot, and yellow-fleshed fruit, combined with fragrant floral hints of elderflower and notes of aromatic herbs. The palate is soft and pleasant, enhanced by vibrant freshness and a gentle minerality that lingers in the finish. It pairs well with semi-mature cheeses, vegetarian dishes, flavorful recipes with white fish, shellfish, and crustaceans. It also complements white meats excellently.
