Aroma fruttato
Corpo medioFirst produced in 1989, Sanct Valentin Sauvignon has become a signature white of St. Michael-Eppan Winery. Carefully selected plots below the Mendel Mountains and an interplay of stainless steel and oak give this Alto Adige DOC its combination of aromatic definition, freshness and depth. The 2025 vintage is made for occasions when a Sauvignon with substance and ageing potential is wanted.
Only Sauvignon grapes are used, from vineyards in San Michele and Appiano Monte at 450–650 metres. The plots face southeast and have gravelly limestone soils. Vines are 10–33 years old, trained with the Guyot system. Grapes are picked and selected by hand from mid-September, with a reported yield of 45 hl/ha.
Part of the harvest ferments in stainless-steel tanks, where the wine rests on its fine lees until the end of April. Another portion ferments and matures in tonneaux and larger oak casks. This combination gives the wine added texture without obscuring the grape’s bright, distinctly aromatic profile.
The colour is brilliant greenish yellow. Aromas recall yellow fruit, gooseberry, elderflower and ripe currant, leading to a palate with crisp acidity, supple texture and a long, mineral finish. The producer recommends a cellaring potential of ten years or more under suitable conditions. The official 2025 technical sheet lists 14.5% alcohol by volume.
Serve at 8–10°C with pan-fried or grilled fish, sole, char with pepper sauce, rich vegetable risotto or flavourful vegetable dishes. The 2025 vintage earned 93 points from Falstaff in a tasting dated 12 October 2026. 750 ml bottle; contains sulphites.
