The Spumante Metodo Classico Rosé Extra Brut 60 di Casa Caterina is obtained from 100% Pinot Noir grapes from the areas of Provaglio d'Iseo and Monticelli Brusati in the province of Brescia. The company's vineyards, cultivated using the guyot method inspired by the principles of biodynamic agriculture, are rooted in soils composed of alluvial deposits on a clayey-sandy and loamy-limestone subsoil. During vinification, the alcoholic fermentation that transformed the sugars into alcohol was activated by native yeasts in stainless steel (90%) and oak wood (10%) barrels. According to the rules of the Classic Method, the second fermentation responsible for the effervescence occurred in the bottle, in this case thanks to the inoculation of only the must. The refinement lasted 60 months in contact with the lees before disgorgement.

The Casa Caterina Spumante Metodo Classico Rosè Extra Brut 60 shines in the glass with a cherry pink color enlivened by a fine perlage. On the nose, it releases scents of blackcurrant and wild berries blending with floral notes of rose and hints of malva, closing with nuances of bread crust. The taste is balanced and of good structure, with irresistible freshness and sapidity. The fruity and floral finish is persistent. It pairs well with cold cuts and cheeses, as well as with tasty seafood dishes based on white fish, mollusks, and crustaceans.Product specifications
