The Spumante Lambrusco Reggiano Rubino del Cerro by Venturini Baldini is a blend of Lambrusco of the Montericco, Salamino and Grasparossa varieties. We are on the historic Matildic Hills, in the locality of Roncolo, between Parma and Reggio Emilia; the vineyards, managed organically, are at an altitude of about 250 metres above sea level and rest on clayey-sandy soils. The grapes are vinified in red with fermentation at a controlled temperature, then the second fermentation takes place in a vat according to the long Charmat method. This method is a cross between the classic method and the short Charmat method: the duration of the stay of the wine with the yeasts is 9-15 months, moreover, inside the vat some propeller stirrers are installed which have the task to keep the fermentation sediments in suspension. These characteristics allow to obtain a product defined by a more complex sensorial profile and a finer perlage.
LAMBRUSCO RUBINO DEL CERRO VENTURINI BALDINI: TASTING
The Spumante Lambrusco Reggiano Rubino del Cerro by Venturini Baldini enters the glass with a brilliant ruby red. The olfactory baggage offers first of all red and black fruits, red currants, blueberries, plums and black cherries, then hints of mint and dark spices. The taste is pleasantly savoury, fresh and with very soft tannins. Excellent with traditional Quadrettini with giblets, squares of egg pasta cooked in meat broth and enriched with a small sauce of poultry entrails.Product specifications
