Corpo leggeroCantina Bacco's Brut Amoenus is 100% Cacchione. Cacchione is a biotype of Bellone, a white grape varietial typically found in the area south of Rome. Cacchione has grown and adapted over the millennia in the area known as the Costa dei Cesari (the Coast of the Caesars) which today corresponds to the territory in the municipalities of Anzio and Nettuno where the original ""free foot"" cultivation technique is still used. The sandy soils and the somewhat restricted environment have safeguarded this small area from the infestation of phylloxera. The harvest takes place at the beginning of September and subsequently the grapes undergo soft pressing and a first fermentation in steel tanks at a controlled temperature, with carefully chosen yeasts. The second fermentation is carried out with the long Charmat method for 30 days, after which the sparkling wine remains on the fine lees for the following 6-8 months.
Cantina Bacco's Brut Amoenus has a fine, persistent perlage that illuminates the wine's pale straw yellow color. The nose is decisive, with notes of pear, exotic fruit, broom flower, acacia, wild herbs, and hints of citrus. In the mouth it is very crisp and slightly savory with a delightful persistence. Perfect paired with fried cod.
