After harvesting and destemming, they underwent maceration for 18/20 hours at a temperature of 10/12°C. 10% of the must fermented and aged on the lees for 6 months in large wooden barrels, while the rest in steel tanks. Sauvignon is said to be a grape native to Bordeaux in France that has managed, thanks to its remarkable adaptability, to spread to many parts of the world. In Italy, its cultivation is particularly widespread in Friuli Venezia Giulia and Trentino Alto Adige.
The Sauvignon Ronco delle Mele di Venica presents itself to the eye with an intense straw-yellow color. On the nose, there is an enveloping interplay of aromas of tropical fruits with yellow pulp, citrus, and hints of tomato leaf, a typical scent of the grape variety. Soft and velvety, on the palate, it offers an elegant aromaticity and a great balance between freshness and minerality. The finish is long and pleasant. It pairs well with fresh and semi-aged cheeses, as well as vegetarian dishes and seafood recipes at the table.
