Fichimori by Tormaresca is a selection of Negroamaro (about 90%) and Syrah grapes from the Maìme estate in San Pietro Vernotico, located in the high Salento. The winery, which spans about 500 hectares, with 350 planted to vines and 85 to olive groves, lies along the Adriatic coast, creating a unique landscape of vineyards that emerge between forests and pine woods and stretch as far as the eye can see, blending with the sea. As soon as the grapes arrive at the winery, they undergo a cold pre-fermentation maceration (5°C), lasting for 5 days, aimed at extracting the varietal aromas, color, and the softer polyphenolic components. This is followed by pressing and fermentation without the skins at 18°C (a low temperature for red wine fermentation).

Fichimori Tormaresca: Tasting Notes

Fichimori by Tormaresca presents a delicate ruby red color with violet reflections. On the nose, it is vibrant, with aromas of fresh red fruits, roses, violets, and Mediterranean scrub. The palate is fresh, subtle, and flavorful. Fichimori is a wine designed and crafted to have a drinkability almost similar to that of a Rosé. It pairs wonderfully with grilled veal and zucchini with nepitella.
