The Ribolla Gialla of Villa Russiz was produced with 100% Ribolla Gialla grapes grown in the territory of Capriva del Friuli, in the province of Gorizia and coming from vineyards located on marly soils and fully exposed to the South. After the harvest, carried out by hand in the early hours of the morning, the grapes were transported to the cellar to be subjected whole to a soft pressing, subsequently to a destemming process and, finally, to a cold maceration lasting 1-2 days, useful for the extraction of primary aromas. Once the free-run must (the purest and clearest part of the must, obtained from the first pressing) is obtained, the alcoholic fermentation - which transforms the sugars into alcohol - is carried out at a controlled temperature. Before bottling, Villa Russiz's Ribolla Gialla Collio DOC 2018 was aged for 8 months on the fine lees, enriching itself in terms of structure, aromas and substances.
The Ribolla Gialla by Villa Russiz is presented in a straw yellow colour with greenish reflections in the glass. On the nose, it releases aromas of yellow pulp fruit and white flowers that intertwine with herbaceous and balsamic hints and notes of flint. The sip is fresh and soft, supported by an elegant minerality that persists in the finish. Excellent as an aperitif, at the table it goes well with fresh and semi-aged cheeses as well as with fried fish and vegetables, with tasty seafood recipes based on white fish, molluscs and crustaceans
