Acquavite di Vinaccia takes the grape pomace from Amarone della Valpolicella production and gives it another expression through distillation. The 200 ml format is a compact way to discover a spirit closely linked to the raw materials and traditions of this Valpolicella estate.
The spirit is made by distilling grape pomace from the Valpolicella hills, originating from grapes used to produce Amarone. Pomace consists of the grape skins and other solids remaining after winemaking. Distilling these materials creates a spirit rather than a wine: this is Italian marc spirit, not Amarone itself and not a brandy distilled from finished wine.
The Quintarelli family estate is based in Negrar di Valpolicella, near Verona. Careful selection of grapes and traditional cellar work are central to its identity. This acquavite offers a different perspective on the estate, connecting a distilled spirit to the grape materials of its renowned Amarone production.
The Amarone pomace spirit is described as full-flavoured, expressive and lingering. Enjoy it neat, in small sips, preferably from a small open glass as an after-dinner drink or as part of a focused tasting. Slightly cool service at around 10–12°C is a suitable suggestion for this style; dark chocolate makes a possible pairing.
