Corpo medioPinot Grigio Sivi di Dario Prin?i? is born from old vineyards over 60 years old, planted on marly and rich in sandstone soils. We are in Oslavia, a land of borders and conflicts; Dario has been cultivating about 7 hectares with the traditional grapes of the Gorizia region since 1988. The soils are composed of "ponca" and clays, the slope of the vineyards requires almost exclusively manual work, natural ground cover, and treatments reduced to a practically homeopathic use of copper and sulfur. Following ancient tradition in these places, fermentations occur spontaneously in the cellar, with macerations of varying duration. In the case of this wine, one week in open vats, without temperature control, minimal addition of sulfur, and with daily manual punch-downs. Aging takes place in large exhausted barrels for about 30 months, with spontaneous clarification by sedimentation, in steel tanks before bottling.
Pinot Grigio Sivi di Dario Prin?i? presents itself with an intense golden pink color. On the nose, fruity and citrus notes blend with sensations of spices and smokiness, enriched by aromas of hay and wild flowers, with hints of beeswax and woodland resins. In the mouth, the citrusy freshness is sweetened by a caramel touch, the tannins are finely perceptible, and the territorial minerality is evident. Interesting pairing with braised chicken stuffed with pork.
