This Pinot Grigio Alto Adige DOC 2025 expresses the Alpine character of Abbazia di Novacella through a white wine that combines generous fruit with freshness and precision. Its identity is closely tied to the Bressanone basin, where altitude and permeable moraine soils help preserve balance and definition.

Vineyards at 600-700 metres in the Bressanone basin

The grapes come from the Bressanone basin, at elevations between 600 and 700 metres, on permeable moraine deposits composed of mica schist, paragneiss and quartzite. The vineyards face south, south-east and south-west and are trained using the Guyot system. The wine is made from 100% Pinot Grigio.

Stainless steel and large oak casks

Three quarters of the must ferment and mature in stainless steel, while one quarter is vinified in 30 hl oak casks. Fermentation takes place at 17-19 °C, followed by 6 months of maturation. This approach preserves varietal clarity while adding texture and depth without overwhelming the wine.

Pear, banana and a gently nutty finish

The colour ranges from greenish yellow to straw yellow. The nose shows delicate notes of honey, pear and banana; the palate is full, harmonious and subtly nutty, finishing with balance. Serve at 8-10 °C. It pairs well with fish, white meats and delicate first courses. The producer indicates an ageing potential of 4-6 years.
