The Pecorino di Illuminati was born from 100% Pecorino di IlluminatiPecorino grapes coming from a vineyard facing South-East, at 250 meters above sea level. The harvest was carried out by hand in the second decade of September. In the winery, the grapes were destemmed and gently pressed. The resulting must was fermented 90% in stainless steel tanks at a temperature of 16-18°C and 10% in barrels. In the same containers, the wine aged for a period of 4 months.

The Pecorino di Illuminati presents itself to the eye with a straw yellow color and greenish reflections. On the nose, aromas of yellow pulp fruit, aromatic herbs, and Mediterranean citrus fruits stand out. The taste offers a vibrant mineral freshness that invites a second sip. Excellent as an aperitif, it pairs perfectly with vegetarian dishes on the table as well as delicious seafood recipes based on white fish, shellfish, and crustaceans.
